  • 8 oz skinless and boneless chicken thigh, cut into bite-size pieces Opt for skinless and boneless thighs for richness.
  • 1 teaspoon cornstarch Essential for marinating the chicken.
  • 2 1/2 tablespoons oil For sautéing.
  • 1/2 onion quartered To add flavor.
  • 1/2 red bell pepper cut into chunks For sweetness and color.
  • 1/2 green bell pepper slivered into 1-inch lengths For texture.
  • 1/2 medium-ripe mango, peeled, pitted, and cubed Choose a ripe mango for ultimate sweetness.
  • 2 1/2 tablespoons ketchup Base for the sauce.
  • 2 tablespoons chili sauce (Lingham or Maggi) Adjust based on desired spice level.
  • 1 tablespoon oyster sauce For depth of flavor.
  • 1 teaspoon honey Adds sweetness.
  • 3 tablespoons mango juice (or water) To thin the sauce.
  • 1/2 teaspoon apple cider vinegar For acidity.
  • 1/2 teaspoon sugar (or to taste) To balance flavors.

Method
 

Preparation
  1. In a bowl, mix the chicken pieces with cornstarch until evenly coated. Set aside to marinate.
  2. In a separate bowl, mix the ketchup, chili sauce, oyster sauce, honey, mango juice, apple cider vinegar, and sugar. Adjust taste with salt and sugar.
Cooking
  1. Heat 1/2 tablespoon of oil in a skillet over medium-high heat. Add the onion, red bell pepper, and green bell pepper. Stir-fry for about 3–4 minutes until fragrant and lightly charred. Remove and set aside.
  2. In the same skillet, heat the remaining oil and add the marinated chicken. Sauté for about 5–6 minutes or until the surface turns white and is slightly golden.
  3. Stir in the mango cubes and mix continuously for about 2 minutes until combined and the mango is heated through.
  4. Pour in the sauce along with the sautéed onion and bell peppers. Stir well to combine and cook for an additional minute. Serve immediately.

Notes

For best results, marinate the chicken for at least 15 minutes. Cook on medium-high heat for a beautiful sear. Adjust seasonings as needed.
