Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Opt for fresh chicken for best flavor; frozen can be used but thaw fully first.
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced Fresh garlic offers a more robust flavor compared to pre-minced varieties.
  • 1 cup heavy cream For a lighter version, you can substitute half-and-half or a plant-based alternative.
  • 1 cup chicken broth
  • 1 teaspoon dried oregano If using fresh herbs, remember to double the amount.
  • 1 teaspoon dried thyme If using fresh herbs, remember to double the amount.
  • to taste Salt and pepper Season to preference.

Method

Preparation
  1. Begin by seasoning the chicken breasts generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  3. Place the chicken into the skillet and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
  4. Add the minced garlic to the same skillet, sautéing for about 1 minute until fragrant.
Cooking
  1. Pour in the chicken broth and heavy cream, stirring everything together until fully combined.
  2. Sprinkle in the oregano and thyme, allowing the sauce to simmer gently.
  3. Return the chicken to the skillet, cover it, and let it simmer for an additional 10-15 minutes, or until cooked through.
Serving
  1. Serve over your choice of pasta or rice, garnished with fresh parsley for a splash of color.

Notes

Let the sauce simmer long enough to meld the flavors beautifully. If you’d like a thicker sauce, allow it to reduce further before adding the chicken back. Always check the chicken's internal temperature; it should reach 165°F for safe consumption.
