  • 1/2 cup cucumber, diced English cucumbers are a mild choice; peel if the skin is waxed.
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese or plant-based crumble.
  • 1/4 cup olives, pitted and sliced Kalamata or green olives both work well.
  • 1/4 cup sunflower seeds Pumpkin seeds or chopped toasted almonds work as substitutes.
Dressing
  • 1/4 cup olive oil Good-quality extra virgin recommended.
  • 2 tablespoons balsamic vinegar Aged balsamic is preferred.

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, olives, and sunflower seeds.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
