  • 1 can marinated artichoke hearts, drained and chopped Choose marinated for extra flavor.
  • 4 cloves garlic, minced Fresh minced garlic elevates the dish.
  • 2 teaspoons dried oregano Dried herbs can be substituted with fresh (double amount).
  • 1 teaspoon dried thyme
  • 3 tablespoons olive oil
  • to taste Salt and pepper For seasoning.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a spacious baking dish, lay out the bone-in chicken pieces in a single layer.
  3. In a mixing bowl, combine the chopped artichoke hearts, minced garlic, oregano, thyme, olive oil, and season with salt and pepper.
  4. Drizzle the artichoke mixture over the chicken, ensuring each piece is generously coated.
Cooking
  1. Pop the dish in your preheated oven and bake for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden-brown and crispy.
  2. Serve immediately, ideally with a side of cooked rice or roasted potatoes to soak up the delicious juices.

Notes

For even cooking, ensure chicken pieces are of similar size. Marinating overnight can enhance flavor. Spoon some juices over the chicken halfway through for moisture, and allow to rest before serving.
