Ingredients
  

For the Marinade
  • 1 lb 1 - 1.5 lb chicken thigh fillets More flavorful and juicy than breast meat.
  • 1 tbsp olive oil Use extra virgin for a bolder flavor.
  • 4 tbsp orange juice Freshly squeezed preferred.
  • 2 tbsp apple cider vinegar or rice vinegar
  • 1.5 tbsp lime juice Freshly squeezed is best.
  • 3 cloves garlic, minced
  • 1.5 tbsp chipotle or ancho chile powder
  • 2 tsp dried oregano
  • 2 tsp smoked paprika powder
  • 1/8 tsp All Spice
  • 1/4 tsp cinnamon powder
  • 1/4 - 1/2 tsp cayenne pepper (optional) Adjust based on heat preference.
  • 1 tsp salt
  • to taste black pepper
For Serving
  • tortillas or taco shells
  • pico de gallo (tomato salsa)
  • sour cream
  • avocado
  • fresh coriander/cilantro
  • lime wedges

Method
 

Preparation
  1. Place marinade ingredients in a ziplock bag and combine well.
  2. Add chicken thighs to the bag, coat thoroughly, and refrigerate for at least 3 hours (preferably overnight).
  3. Remove chicken from marinade and discard the marinade.
Cooking
  1. Heat oil in a skillet or grill over medium-high heat.
  2. Cook chicken for approximately 4 minutes on each side until golden brown. Ensure the internal temperature reaches 165°F for safe consumption.
  3. Remove from heat and let rest for 3 minutes before slicing to retain juices.
Assembly
  1. Serve sliced chicken in tortillas topped with pico de gallo, avocado, sour cream, and cilantro.

Notes

For variations, substitute chicken with marinated grilled tempeh or jackfruit for a vegan option. Adjust chipotle and cayenne for mild or spicy preferences.
