Ingredients
  

For the Chicken Marinade
  • 1 lb 1 - 1.5 lb chicken thigh fillets Juicy and flavorful, ideal for grilling.
  • 1 tbsp 1 tbsp olive oil Healthy fat, enhances flavor.
  • 4 tbsp 4 tbsp orange juice Best when freshly squeezed.
  • 2 tbsp 2 tbsp apple cider vinegar Adds acidity and balance.
  • 1.5 tbsp 1 1/2 tbsp lime juice Provides a zesty flavor.
  • 3 cloves 3 garlic cloves, minced
  • 1.5 tbsp 1 1/2 tbsp chipotle or ancho chile powder For a smoky depth of flavor.
  • 2 tsp 2 tsp dried oregano
  • 2 tsp 2 tsp smoked paprika powder
  • 1/8 tsp 1/8 tsp All Spice
  • 1/4 tsp 1/4 tsp cinnamon powder
  • 1/4 - 1/2 tsp 1/4 - 1/2 tsp cayenne pepper (optional) Adjust based on spice preference.
  • 1 tsp 1 tsp salt

For Serving
  • 4 Tortillas or taco shells Choose your favorite kind.
  • 1 Pico de Gallo (tomato salsa) Enhances freshness.
  • 1 Sour cream
  • 1 Avocado Sliced for topping.
  • to garnish Fresh coriander/cilantro
  • 1 Lime wedges For squeezing over the tacos.

Method
 

Marinating the Chicken
  1. Place marinade ingredients in a ziplock bag. Add chicken, massage to coat, then refrigerate to marinate for at least 3 hours, preferably overnight.
Cooking the Chicken
  1. Remove chicken from marinade, discard marinade. Heat oil in a skillet over medium high heat.
  2. Cook chicken for 4 minutes on each side, until dark golden brown.
  3. Remove chicken onto a plate, cover loosely with foil and rest for 3 minutes.
  4. Cut chicken into strips for tacos.
Assembling the Tacos
  1. Serve with warmed tortillas, pico de gallo, sliced avocado, sour cream, and lime wedges.

Notes
