  • 3 cups cooked chicken, shredded or diced Use rotisserie, leftover roast, or poached breasts.
  • 8 oz cream cheese, softened Soften to room temperature for smooth blending.
  • 1 cup cottage cheese, small curd Full-fat gives the creamiest result.
  • 1 cup sour cream Greek yogurt can be used as a substitute.
  • 1 onion, chopped Finely chop or sauté briefly.
  • 2 cloves garlic, minced Use roasted garlic for a sweeter flavor.
  • 1 can cream of chicken soup Canned or homemade for binding flavor.
  • 1 cup Ritz crackers, crushed Substitute with panko for a crunchier topping.
  • 4 tbsp butter, melted Drizzle over the cracker topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chicken, cream cheese, cottage cheese, sour cream, chopped onion, minced garlic, and cream of chicken soup.
  3. Pour the mixture into a greased casserole dish.
  4. Crush the Ritz crackers and sprinkle them over the top, then drizzle melted butter over the crackers.
Baking
  1. Bake in the preheated oven for 30-40 minutes or until bubbly and golden on top.
  2. Allow to cool slightly before serving.

Notes

Make-ahead: Assemble without cracker topping and refrigerate up to 48 hours or freeze for up to 3 months. Reheat uncovered in the oven for best results.
