  • 2 cups cooked chicken, shredded Use roasted or leftover rotisserie chicken for deeper flavor.
  • 1 can cream of chicken soup Can substitute with a homemade white sauce or cream of mushroom.
  • 1 cup sour cream Greek yogurt can be used for a lighter finish.
  • 1 cup cheddar cheese, shredded Try sharp white cheddar or a mix with Monterey Jack.
  • 1/2 cup milk
  • 1/2 cup French fried onions Panko toasted in butter can be used as a substitute.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 2 cups cooked rice or pasta (optional) Brown rice or rotini add heartiness.

Method
 

Baking Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. If using, add cooked rice or pasta to the mixture and stir.
  4. Pour the mixture into a greased 9x13 inch baking dish.
  5. Sprinkle the shredded cheddar cheese on top, followed by the French fried onions.
  6. Bake in the preheated oven for 30-35 minutes, or until hot and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for 3 to 4 days. Can be made ahead and frozen without fried onions.
