  • 2 wedges leftover peri peri roast pumpkin Swap for any leftover roasted squash or sweet potato if peri peri spice is not available; use a sprinkle of smoked paprika for a similar warmth.
  • 1 ripe avocado ripe avocado Select avocados that yield slightly to gentle pressure for easy mashing; if unripe, keep at room temperature until soft.
  • 1 long green shallot, thinly sliced Scallions or mild red onion work well; slice very thin to keep sharpness mild.
  • 1 Juice of 1 lime Lemon juice can be used in a pinch.
  • 4 slices miche round sourdough Any crusty sandwich bread or whole grain loaf is fine.
  • 1/4 cup (75g) aioli Swap for mayonnaise mixed with a clove of grated garlic for a quick homemade aioli.
  • 1 cup leftover coleslaw Store-bought coleslaw or a quick shredded cabbage and carrot mix keeps it crisp.
  • 150 g leftover roast chicken Shredded or sliced rotisserie chicken works perfectly.
  • 1/2 cup (20g) alfalfa sprouts Microgreens, watercress, or baby spinach can add a similar lift.
  • to taste Hot sauce Choose your favorite bottled hot sauce.

Method
 

Sandwich Assembly
  1. Place pumpkin in a bowl and smash with a fork, leaving a few small chunks for texture.
  2. In a separate bowl, mash the avocado to a slightly chunky consistency.
  3. Add shallot and lime juice to the avocado and stir to combine. Season with salt and pepper.
  4. Spread aioli on the bread to protect it from moisture.
  5. Spread pumpkin over half the slices, then top with coleslaw, chicken, and sprouts.
  6. Spread the remaining bread slices with avocado and press gently together.
  7. For a cleaner cut, chill the sandwiches for 5 minutes before slicing.
  8. Serve with hot sauce on the side.
