Preparation
- Preheat the oven to 400°F (200°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken breasts with salt and pepper, and add them to the skillet. Brown the chicken on both sides for about 4-5 minutes.
- Pour the balsamic vinegar over the chicken, then add the cherry tomatoes.
- Place the skillet in the oven and bake for 20-25 minutes, until the chicken is cooked through.
- In the last 5 minutes of baking, add the mozzarella balls on top of the chicken.
- Once done, remove from the oven and sprinkle with fresh basil before serving.
Notes
Make-ahead: You can prep the chicken and marinate it in the balsamic mixture a few hours ahead for deeper flavor. This dish keeps well and can be stored in the fridge for up to 3 days or frozen for up to 2 months.
