One-Pan Balsamic Chicken with Tomatoes and Mozzarella

  • 4 pieces boneless, skinless chicken breasts Look for fresh, high-quality chicken for the best flavor and tenderness.
  • 1 cup balsamic vinegar Choose a good quality vinegar for a richer taste.
  • 2 cups cherry tomatoes, halved Opt for bright, firm tomatoes for flavor and color.
  • 1 cup fresh mozzarella balls Use fresh mozzarella for a creamier texture.
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  3. Season the chicken breasts with salt and pepper, and add them to the skillet. Brown the chicken on both sides for about 4-5 minutes.
  4. Pour the balsamic vinegar over the chicken, then add the cherry tomatoes.
  5. Place the skillet in the oven and bake for 20-25 minutes, until the chicken is cooked through.
  6. In the last 5 minutes of baking, add the mozzarella balls on top of the chicken.
  7. Once done, remove from the oven and sprinkle with fresh basil before serving.

Notes

Make-ahead: You can prep the chicken and marinate it in the balsamic mixture a few hours ahead for deeper flavor. This dish keeps well and can be stored in the fridge for up to 3 days or frozen for up to 2 months.
