Cooking
  1. Bring the mixture to a simmer; cover and cook on low for about 20 minutes until the rice is tender and has absorbed all the flavors.
  2. During the last 5 minutes of cooking, add the mixed vegetables on top to steam.
  3. Let sit for 5 minutes before fluffing the rice with a fork.
