  • 1 pint cherry tomatoes, halved Alternatively, grape tomatoes can be used.
  • 1 cup fresh mozzarella, cubed Use fresh mozzarella for creaminess that melts beautifully.
  • to taste Salt and pepper Season generously.
  • Fresh basil leaves Adds an aromatic touch; dried is a substitute if fresh is unavailable.

Preparation
  1. Preheat your oven to 400°F (200°C) to lock in all the flavors.
  2. In a large, oven-safe pan, heat the olive oil over medium-high heat.
  3. Season the chicken breasts generously with salt and pepper and place them in the pan. Brown both sides for about 5 minutes each.
Cooking
  1. Pour the balsamic vinegar over the chicken and bring it to a simmer.
  2. Add the halved cherry tomatoes and allow them to cook down slightly.
  3. Carefully transfer the pan to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  4. Remove from the oven, top with mozzarella and fresh basil, letting the heat melt the cheese.
  5. Serve warm and enjoy!

Notes

You can marinate the chicken in balsamic vinegar the night before for enhanced flavor. Store leftovers in an airtight container in the fridge for up to three days. Freeze cooked chicken with sauce for up to three months.
