- In a large bowl, combine the carrots with olive oil, minced garlic, salt, and pepper; toss until each piece is lightly coated.
- Sprinkle the grated Parmesan over the carrots and toss again to ensure cheese clings to the oil.
Arrange and Roast
- Spread the carrots in a single layer on a rimmed baking sheet lined with parchment or lightly oiled.
- Roast in the preheated oven for 20 to 30 minutes, turning halfway, until tender and golden on the edges.
Finish and Serve
- Remove from the oven and taste for seasoning, then scatter fresh parsley before serving.
