Preparation
  1. Preheat the oven to 425°F (220°C). Wash and peel the carrots if desired, then cut them into even batons or halves lengthwise.
Seasoning Toss
  1. In a large bowl, combine the carrots with olive oil, minced garlic, salt, and pepper; toss until each piece is lightly coated.
  2. Sprinkle the grated Parmesan over the carrots and toss again to ensure cheese clings to the oil.
Arrange and Roast
  1. Spread the carrots in a single layer on a rimmed baking sheet lined with parchment or lightly oiled.
  2. Roast in the preheated oven for 20 to 30 minutes, turning halfway, until tender and golden on the edges.
Finish and Serve
  1. Remove from the oven and taste for seasoning, then scatter fresh parsley before serving.

Notes

Cutting the carrots into uniform pieces ensures even roasting. Let the roasted carrots sit briefly off heat to knit flavors together.
