  • 2 cups chicken broth
  • 1 piece bell pepper, diced
  • 1 piece onion, diced

  • 1 tablespoon olive oil
  • Green onions, for garnish

Method
 

Preparation
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add diced onion, bell pepper, and minced garlic to the skillet. Sauté until soft and fragrant, about 3-4 minutes.
  3. Season chicken breasts with salt and pepper. Add to the skillet and cook for about 5 minutes on each side, until browned.
  4. Stir in rice, chicken broth, and pineapple chunks, ensuring everything is combined.
  5. Bring to a boil, then reduce to low heat. Cover and let it simmer for 15-20 minutes or until rice is tender.
  6. Once cooked, season with soy sauce to taste.
  7. Remove from heat, garnish with green onions, and serve hot.

Tip: Marinate the chicken in soy sauce for deeper flavor. Adjust seasoning while cooking for balance. This dish is easily customizable for vegetarian options or to add spice.
