  • 2 lbs chicken breast, boneless and skinless Thighs can be used for a richer flavor.
  • 1 unit onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) coconut milk Full-fat for creamier sauce.
  • 1 cup tomato puree
  • 1/4 cup butter
  • 2 tablespoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

Preparation
  1. In your slow cooker, add the chicken breast, chopped onion, minced garlic, grated ginger, coconut milk, tomato puree, butter, garam masala, ground cumin, turmeric, salt, and pepper. Stir everything until well combined.
Cooking
  1. Cover the slow cooker and set it to low for 6-8 hours or high for about 4 hours.
  2. Once cooked, use two forks to shred the chicken directly in the slow cooker and mix it thoroughly with the sauce.
Serving
  1. Serve hot, garnished with fresh cilantro, over a bed of fluffy rice or alongside warm naan.

Notes

For added flavor, consider a splash of lemon juice before serving. You can customize the dish's heat by adding red chili flakes or cayenne pepper.
