  • 1 pound Dried Red Beans Check for stones or debris before use.
  • 1 link Andouille Sausage (quartered) Can substitute with turkey sausage for a milder flavor.
  • 2 links Smoked Sausage (sliced)
  • 1 each Yellow Onion (diced) Choose plump for optimal flavor.
  • 1 rib Celery (diced) Choose fresh for best results.
  • 4 cloves Garlic (minced)
  • 3 each Bay Leaves
  • 6 cups Water
  • 2 each Beef Bouillon Cubes
  • 1 tablespoon Cajun Seasoning Adjust based on taste preference.

Method
 

Preparation
  1. Add all the ingredients to a 5-quart (or bigger) slow cooker.
  2. Give everything a good stir to combine all the flavors.
  3. Cover with the lid and cook on high for 6 hours.
  4. Depending on your preference for creaminess, mash some of the beans against the side of the pot as they cook.
  5. Once done, serve over fluffy rice for the best experience.

Notes

Serve with cornbread or a green salad for a balanced meal. For extra flavor, consider adding smoked paprika or hot sauce before serving.
