  • 1 cup chicken broth Low-sodium broth is a great alternative to control saltiness.
  • 1/2 cup sour cream For extra richness, add an additional 1/4 cup just before serving.
  • 1 cup mixed veggies (frozen) Fresh vegetables can be used, though frozen provide convenience.

Preparation
  1. Lightly season the chicken breasts with salt and pepper before placing them at the bottom of the slow cooker.
  2. In a medium bowl, combine the cream of chicken soup, chicken broth, and sour cream, stirring until smooth.
  3. Pour this creamy mixture evenly over the seasoned chicken.
  4. Sprinkle the stuffing mix over the top and nestle the frozen mixed veggies right on top.
Cooking
  1. Secure the lid of your slow cooker and cook on high for 4 hours or low for 6 hours.
  2. After cooking, shred the chicken with two forks and gently mix everything together.

Notes

Serve family-style in a large bowl, garnished with fresh parsley. Store leftovers in an airtight container for up to four days. For reheating, microwave covered to prevent drying out.
