  • 4 pieces boneless, skinless chicken breasts For even cooking and lean protein.
  • 2 tablespoons olive oil A neutral olive oil is recommended for clean flavors.

  • 1 unit lemon, juiced and zested For layered citrus notes.
  • 1 teaspoon dried thyme Dried herbs hold up well in slow cooking.
  • 1 teaspoon dried rosemary Dried herbs are recommended.
  • to taste unit salt and pepper Adjust seasoning to preference.
For the Vegetables
  • 4 cups mixed vegetables (carrots, bell peppers, zucchini) Use firm, even-cut vegetables.
  • 1 cup chicken broth Low-sodium is preferred.

Preparation
  1. In a slow cooker, add the chicken breasts and season with salt, pepper, thyme, and rosemary.
  2. In a small bowl, combine olive oil, minced garlic, lemon juice, and lemon zest. Pour this mixture over the chicken.
  3. Add the mixed vegetables around the chicken.
  4. Pour the chicken broth into the slow cooker.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is cooked through and vegetables are tender.
  2. Serve warm.

Notes

Nest the vegetables around the chicken for even cooking. If preferring firmer vegetables, add them according to their cooking times. Let the chicken rest after cooking for juicier results.
