  • 1.5 lbs chicken thighs or breasts Thighs offer more flavor; breasts can be used for a leaner option.
  • 2 pcs lemons (juiced and zested) Fresh lemons deliver the best flavor.
  • 2 tablespoons olive oil Extra virgin adds richness; light olive oil can also be used.
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano Fresh herbs can elevate the dish.
  • 1 teaspoon dried thyme
  • Salt and pepper to taste Adjust seasoning to preference.
  • 1 cup chicken broth
For the Rice
  • 2 cups long-grain white rice Can swap with brown rice for extra fiber.
  • 4 cups water

Preparation
  1. In a slow cooker, combine the chicken, lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper. Stir until coated well.
  2. Pour in the chicken broth and mix gently to incorporate all ingredients.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
  2. About 30 minutes before serving, cook the rice according to package instructions using the 4 cups of water.
  3. Once the rice is cooked, fluff it with a fork, ensuring it's light and airy. Serve with the lemon herb chicken.

Notes

Marinating the chicken for a few hours can amplify the lemon flavor. Ensure sufficient liquid in the slow cooker for moisture.
