Preparation
- Place the chicken breasts into the slow cooker and pour the chicken broth on top to keep the meat moist and flavorful.
- In a separate bowl, combine the grated Parmesan cheese, minced garlic, dried basil, parsley, salt, and pepper. Mix these ingredients thoroughly until well blended, then spread them over the chicken in the slow cooker.
Cooking
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken reaches a tender consistency that shreds easily with a fork.
- Once done, preheat your oven to 375°F (190°C). Shred the chicken and mix it back with the juices in the slow cooker.
Assembly
- Slice the sandwich rolls open and brush the insides with melted butter mixed with garlic powder. Toast them in the oven for about 5 minutes until golden and fragrant.
- Assemble your sandwiches by placing the shredded chicken onto the bottom half of the rolls. Sprinkle a generous layer of mozzarella cheese on top and place the tops of the rolls to complete the sandwich.
- Serve warm and enjoy every bite!
