  • 1 32 oz. bag hash browns May substitute fresh diced potatoes
  • 14 oz kielbasa Cut into small pieces
  • 1 small onion Diced
  • 2.5 cups shredded cheddar cheese Divided
  • 10.5 oz cream of chicken or mushroom soup
  • 1/2 cup sour cream Greek yogurt can be used as a substitute
  • Salt and pepper To taste

Method
 

Preparation
  1. Combine hash browns, kielbasa, onion, and 2 cups of cheese in a greased slow cooker.
  2. In a separate bowl, mix cream of chicken, sour cream, salt, and pepper together.
  3. Pour the creamy mix over the hash brown mixture and stir well to combine.
  4. Sprinkle the remaining cheese on top.
Cooking
  1. Cook on low for 6-8 hours or on high for 4-5 hours, ensuring the potatoes and onions are tender.
  2. Avoid overcooking to keep the potatoes from becoming mushy.
  3. Enjoy!

Notes

For added flavor, sauté sausage and onions before adding to the slow cooker. Add fresh herbs like parsley or chives before serving.
