  • 2 cups cooked shredded chicken Use leftover chicken for convenience.
Vegetables and Toppings
  • 1 can black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup diced tomatoes Use fresh tomatoes for the best flavor.
  • 1 avocado, diced Always select ripe avocados.
  • 1 cup shredded cheese
  • Fresh cilantro, chopped
Seasoning
  • 1 tablespoon taco seasoning You can make your own spice mix for a personalized touch.

Method
 

Preparation
  1. In a large bowl, combine cooked rice and taco seasoning. Stir to coat evenly.
  2. In meal prep containers, layer rice, shredded chicken, black beans, corn, diced tomatoes, avocado, and shredded cheese.
  3. Top with fresh cilantro and add lime wedges on the side.
  4. Seal containers and refrigerate for up to 5 days.
  5. To serve, warm in the microwave and enjoy!
