Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts or thighs Opt for thigh meat for richer flavor and tenderness.
  • 1 tablespoon tamari or soy sauce Use 1 tablespoon for marinating, ⅓ cup divided.
  • 2 tablespoons extra virgin olive oil Use a splash for cooking as well.
  • Black pepper Add to taste.
  • 2 tablespoons orange juice
  • 0.25 cup honey
  • 2-3 tablespoons chili paste Adjust according to spice preference.
  • 1 tablespoon fresh ginger, chopped Consider grating for gentler taste.
  • 2 cloves garlic, chopped Use fresh for best flavor.
For Serving
  • 3-4 cups cooked rice Use chicken broth instead of water for added flavor.
  • Sliced cucumber

For the Yum Yum Sauce
  • 0.33 cup olive oil mayo
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon seasoned salt
  • 0.25 teaspoon cayenne pepper

Method
 

Preparation
  1. In a mixing bowl, combine 1 tablespoon tamari, olive oil, black pepper, orange juice, honey, chili paste, ginger, and garlic. Add the chicken breasts or thighs, ensuring they’re well coated. Let it marinate for at least 15 minutes.
Cooking
  1. Heat a skillet over medium-high heat. Add a splash of olive oil and cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for a few minutes.
Prepare the Yum Yum Sauce
  1. In a small bowl, mix together the olive oil mayo, ketchup, Worcestershire sauce, seasoned salt, and cayenne pepper. Adjust seasonings to taste.
Serve
  1. Slice the chicken and serve it over a bed of cooked rice. Top with sliced cucumbers, avocado, a side of kimchi, fried wontons, and drizzle generously with Yum Yum sauce.

Notes

Consider incorporating sesame oil into the marinade for extra flavor. Store leftovers separately from rice for better preservation.
