Preparation
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat.
- Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
- Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a large bowl, combine the softened cream cheese, sour cream, mozzarella cheese (reserve 1/2 cup for topping), grated Parmesan, salt, and pepper.
- Stir in the cooked chicken and the sautéed spinach mixture until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle reserved mozzarella cheese on top.
- Bake for 25-30 minutes until bubbly and golden on top.
- Let rest for 5 minutes before serving.
Notes
For best results, ensure cream cheese is well-softened and adjust seasoning as needed. To prevent over-browning, cover loosely with foil during part of the baking time.
