  • 3 cups cooked chicken, shredded or diced Shredded rotisserie chicken works beautifully.
  • 2 cups fresh spinach, chopped Fresh spinach is preferred, but frozen can be used.
  • 8 oz cream cheese, softened Ensure it's softened to blend smoothly.
  • 1.5 cups shredded mozzarella cheese Reserve 1/2 cup for topping.
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream Mixing it with Greek yogurt can add extra creaminess.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil For sautéing.
  • Salt and pepper to taste Adjust to preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
  4. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. In a large bowl, combine the softened cream cheese, sour cream, mozzarella cheese (reserve 1/2 cup for topping), grated Parmesan, salt, and pepper.
  6. Stir in the cooked chicken and the sautéed spinach mixture until well combined.
  7. Transfer the mixture to a greased baking dish and spread evenly.
  8. Sprinkle reserved mozzarella cheese on top.
  9. Bake for 25-30 minutes until bubbly and golden on top.
  10. Let rest for 5 minutes before serving.

Notes

For best results, ensure cream cheese is well-softened and adjust seasoning as needed. To prevent over-browning, cover loosely with foil during part of the baking time.
