Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, cream cheese, shredded mozzarella, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast, ensuring not to slice through the other side.
  4. Stuff each chicken breast with the spinach mixture, securing the opening with toothpicks if necessary.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed chicken breast for about 3-4 minutes per side until golden brown.
  2. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  3. Allow to rest for 5 minutes before removing the toothpicks and serving.

Notes

For a creamy sauce, consider making a simple cream sauce to drizzle over the chicken right before serving. You can prep ahead by stuffing the chicken breasts the night before and store them in the refrigerator until ready to bake.
