  • 1/4 cup ketchup

Preparation
  1. In a mixing bowl, combine the pineapple chunks, soy sauce, brown sugar, ketchup, minced garlic, and minced ginger. Stir until the brown sugar is well dissolved.
  2. Place the chicken breasts at the bottom of the crock pot, seasoning them generously with salt and pepper.
  3. Pour the pineapple mixture over the chicken, ensuring it's evenly coated.
  4. Layer the sliced bell pepper on top of the chicken.
Cooking
  1. Cover and set the crock pot on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked and tender.
