  • 1 lb chicken breast, diced Opt for organic chicken if possible.
  • 1 cup pineapple chunks Fresh pineapple adds the best sweetness.
  • 1/2 cup teriyaki sauce Choose a low-sodium version if needed.
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced Any color of bell pepper will do.
  • 1/2 onion sliced
  • 2 green onions, chopped
  • to taste sesame seeds for garnish

Method
 

Cooking Instructions
  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the sliced bell pepper and onion, cooking until they soften, around 3-4 minutes.
  4. Mix in pineapple chunks and teriyaki sauce, stirring for an additional 2-3 minutes until everything is coated and heated through.
  5. Serve the chicken mixture over cooked rice, making sure each bowl is heaped high.
  6. Garnish with chopped green onions and a sprinkle of sesame seeds for that extra crunch.
