Teriyaki Shrimp Rice Bowls

Ingredients
  

For the Shrimp
  • 1/2 pound jumbo shrimp (peeled and deveined) Fresh is preferable, but frozen is acceptable when thawed properly.
  • 1/4 cup teriyaki sauce Opt for a high-quality sauce that balances sweetness with umami.
  • 3 cloves garlic (minced)
  • kosher salt
  • pepper
  • Blackstone Sweet Teriyaki seasoning blend (optional)
  • cooking oil of choice Use to coat the griddle or skillet.
For Serving
  • 2 pouches (8-ounce) microwave pouches Jasmine rice Using Ben's Ready Rice provides convenience.
  • 1 large avocado (sliced) Choose ripe avocados for creaminess.
  • 1/4 cup chopped cilantro
  • 2 wedge lime
  • Sauce of choice (yum yum sauce, sriracha, spicy mayo, or more teriyaki sauce)

Method
 

Preparation
  1. Pat the shrimp dry and place them in a bowl with the teriyaki sauce, minced garlic, kosher salt, pepper, and optional Sweet Teriyaki seasoning. Toss to combine and let marinate for 5 to 10 minutes.
  2. Preheat your skillet or Blackstone griddle to medium heat (about 400 degrees for an indoor griddle). Add your choice of cooking oil, ensuring it coats the surface well.
Cooking
  1. Cook the marinated shrimp for about 3 to 5 minutes, stirring occasionally until they turn pink and opaque.
  2. While the shrimp are cooking, microwave the rice pouches according to package directions or add uncooked rice with water directly to the griddle, cooking and breaking apart with spatulas as needed.
  3. Serve the rice in bowls, topped with the cooked shrimp, sliced avocado, chopped cilantro, lime wedges, and your preferred sauces.

Notes

For enhanced flavor, marinate the shrimp longer, up to an hour. Keep an eye on the shrimp as they cook to avoid rubbery texture.
