Ingredients
  

For the shrimp
  • 1/2 pound jumbo shrimp, peeled and deveined Fresh or frozen, thawed before cooking.
  • 1/4 cup teriyaki sauce Homemade or store-bought.
  • 3 cloves garlic, minced
  • kosher salt To taste.
  • pepper To taste.
  • Blackstone Sweet Teriyaki seasoning blend Optional.
  • cooking oil of choice For cooking.
For the rice and toppings
  • 2 pouches (8-ounce) microwave Jasmine rice (e.g., Ben's Ready Rice)
  • 1 large avocado, sliced Choose ripe for creaminess.
  • 1/4 cup chopped cilantro
  • 2 pieces lime wedges
  • sauce of choice (e.g., yum yum sauce, sriracha, spicy mayo, more teriyaki sauce) For serving.

Method
 

Preparation
  1. Pat the shrimp dry and place them in a bowl with teriyaki sauce, garlic, kosher salt, pepper, and Sweet Teriyaki seasoning (if using). Toss to combine and let marinate for 5 to 10 minutes.
Cooking
  1. Preheat your skillet or Blackstone griddle to medium heat (400 degrees for indoor griddle). Add cooking oil and the marinated shrimp.
  2. Cook the shrimp for 3 to 5 minutes, stirring occasionally until they are pink and cooked through.
  3. Meanwhile, microwave the rice pouches according to package instructions, or if using a griddle, add uncooked rice with water and cook alongside the shrimp.
Serving
  1. Serve the rice in bowls topped with shrimp, slices of avocado, cilantro, lime wedges, and your choice of sauce.

Notes

For maximum flavor, marinate shrimp for longer if time allows. Leftovers can be stored in an airtight container in the fridge for up to three days.
