- Cut the chicken breasts into bite-sized pieces and season generously with salt and pepper.
- In a large skillet over medium-high heat, pour in the vegetable oil. Once hot, add the chicken pieces and cook until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
- Reduce the heat to medium and sauté the minced garlic in the same skillet for about one minute until fragrant and slightly golden.
- Stir in the soy sauce, peanut butter, and coconut milk, blending well to form a smooth sauce.
- Return the chicken to the skillet, stirring into the sauce until evenly coated. Allow to simmer for a few minutes until heated through.
- Serve warm, garnished with chopped peanuts or fresh cilantro.
Notes
Keep an eye on the chicken while cooking to prevent drying out. Adding a squeeze of lime before serving enhances freshness.
