Preparation
  1. Cut the chicken breasts into bite-sized pieces and season generously with salt and pepper.
  2. In a large skillet over medium-high heat, pour in the vegetable oil. Once hot, add the chicken pieces and cook until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
  3. Reduce the heat to medium and sauté the minced garlic in the same skillet for about one minute until fragrant and slightly golden.
  4. Stir in the soy sauce, peanut butter, and coconut milk, blending well to form a smooth sauce.
  5. Return the chicken to the skillet, stirring into the sauce until evenly coated. Allow to simmer for a few minutes until heated through.
  6. Serve warm, garnished with chopped peanuts or fresh cilantro.

Notes

Keep an eye on the chicken while cooking to prevent drying out. Adding a squeeze of lime before serving enhances freshness.
