Chicken and Marinade
  • 1 pound chicken (breasts or thighs) Opt for thighs for juicier meat, or breasts for a leaner option.
  • 1/2 cup creamy peanut butter For a richer flavor, choose natural peanut butter without added sugars.
  • 1/4 cup soy sauce Low-sodium soy sauce is recommended.
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey Maple syrup can replace honey for a vegan alternative.
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 tablespoon sesame oil
  • to taste Salt and pepper
Garnish
  • to taste Chopped green onions For garnish.

Method
 

Preparation
  1. In a mixing bowl, combine the creamy peanut butter, soy sauce, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and a pinch of salt and pepper. Stir until well blended, forming a thick marinade.
  2. Add the chicken to the marinade, ensuring each piece is thoroughly coated. Cover and let it marinate for at least 30 minutes, or up to 2 hours in the fridge for deeper flavor.
Cooking
  1. Preheat your grill or broiler to medium-high heat; this ensures a nice sear on the chicken.
  2. Place the marinated chicken on the grill or under the broiler. Cook for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  3. Once cooked, take the chicken off the heat and allow it to rest for a few minutes before slicing into manageable pieces.
Serving
  1. Serve the chicken drizzled with any remaining marinade, topped with vibrant green onions and crunchy peanuts for added texture.

Notes

For enhanced flavor, consider adding a splash of lime juice to brighten the dish just before serving. If short on time, marinating the chicken overnight will elevate the taste.
