  1. Prepare all ingredients by mincing garlic and ginger.
Cooking
  1. Heat vegetable oil in a skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes per side until browned and cooked through. Remove from the skillet.
  2. In the same skillet, reduce heat to medium and sauté garlic and ginger until fragrant, about 1-2 minutes.
  3. Stir in peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk until smooth.
  4. Return chicken to the skillet and coat with the peanut sauce. Let simmer for about 5 minutes.
  5. Serve hot over steamed rice or noodles, garnished with chopped peanuts and cilantro.
