Preparation
- Prepare all ingredients by mincing garlic and ginger.
Cooking
- Heat vegetable oil in a skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes per side until browned and cooked through. Remove from the skillet.
- In the same skillet, reduce heat to medium and sauté garlic and ginger until fragrant, about 1-2 minutes.
- Stir in peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk until smooth.
- Return chicken to the skillet and coat with the peanut sauce. Let simmer for about 5 minutes.
- Serve hot over steamed rice or noodles, garnished with chopped peanuts and cilantro.
