Ingredients
  

For the marinade
  • 4 cloves minced garlic
  • 1/4 cup lime juice (2 to 3 limes)
  • 1/4 cup fish sauce
  • 2 tbsp soy sauce
  • 3 tbsp brown sugar Dark brown sugar can provide a deeper caramel flavor.
  • 2 tbsp vegetable oil
  • 2 stalks lemongrass Use fresh lemongrass for a vibrant aroma.
  • 1 piece birds eye chilli, finely chopped Adjust for heat preference.
For the wings
  • 2 lb chicken wings Look for fresh, not previously frozen, wings.

Method
 

Preparation
  1. Bruise the lemongrass and slice the white part into 0.5 cm pieces. Combine lemongrass with garlic, lime juice, fish sauce, soy sauce, brown sugar, and vegetable oil to make the marinade.
  2. Marinate the chicken wings in a ziplock bag with the marinade for at least 3 hours, preferably overnight, to enrich the flavors.
Cooking
  1. Preheat the grill to medium-high heat and oil the grates. Grill wings for 5-7 minutes per side until charred and cooked through.
  2. Alternatively, preheat the oven to 220C / 425F, arrange wings on a wire rack over a lined baking sheet, and roast for 25-30 minutes, turning once to ensure even cooking.
Serving
  1. Serve wings with chopped birds eye chilli and coriander, squeezing fresh lime juice over the top for an extra zing.

Notes

For optimal taste, marinate overnight and adjust spiciness to preference. Consider pairing with jasmine rice or Asian slaw.
