Preparation
  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Season the chicken breasts generously with salt and pepper. Add them to the pot and let them brown on both sides for about 5-7 minutes.
  3. Once browned, remove the chicken from the pot and set it aside.
  4. In the same pot, add the garlic, onion, bell pepper, and mushrooms. Sauté for 5-7 minutes until they're softened and fragrant.
  5. Pour in the chicken broth and bring everything to a gentle simmer.
  6. Return the chicken to the pot, cover it, and let it cook for 20-25 minutes.
  7. Adjust the seasoning with additional salt and pepper as needed. Serve hot.
