- Finely shred the green cabbage and place it in a large mixing bowl.
- Core and julienne the red and green apples, then add them to the bowl.
- Add the dried cranberries, chopped toasted pecans, and thinly sliced green onions to the cabbage and apples, mixing them thoroughly.
Dressing
- In a separate small bowl, combine Greek yogurt, mayonnaise, apple cider vinegar, honey, and Dijon mustard. Mix well.
- Season the dressing with salt and pepper to suit your taste.
Combine and Chill
- Pour the dressing over the cabbage mixture and toss everything together until well coated.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Toss again before serving and adjust seasoning if needed.
