- In a bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 15 minutes for optimal flavor.
- In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then cover and reduce heat to low. Simmer for about 15-20 minutes until the rice is tender and fluffy.
- Heat olive oil in a skillet over medium heat and add the marinated chicken breasts. Cook for 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F and has a beautiful golden-brown crust.
- Once the rice is done cooking, fluff it with a fork. Stir in diced avocados, chopped red onion, cilantro, and additional lime juice if desired. Season lightly with salt to taste.
- Layer the avocado rice on plates, slice the grilled honey lime chicken, and arrange on top. Finish with lime wedges for an added burst of flavor.
