Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken Breasts (boneless, skinless) Opt for organic for the best flavor and quality.
  • 3 tablespoons Honey Choose raw honey for a deeper depth and richness.
  • 2 tablespoons Lime Juice (freshly squeezed) Freshly squeezed juice enhances the overall taste compared to bottled versions.
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin

For the Avocado Rice
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth Use gluten-free broth for a gluten-free dish.
  • 2 pieces Avocado (diced) Look for ripe avocados that yield slightly when pressed.
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped) Adds a beautiful finishing touch.
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Method
 

Preparation
  1. In a bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 15 minutes for optimal flavor.
  2. In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then cover and reduce heat to low. Simmer for about 15-20 minutes until the rice is tender and fluffy.
  3. Heat olive oil in a skillet over medium heat and add the marinated chicken breasts. Cook for 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F and has a beautiful golden-brown crust.
  4. Once the rice is done cooking, fluff it with a fork. Stir in diced avocados, chopped red onion, cilantro, and additional lime juice if desired. Season lightly with salt to taste.
  5. Layer the avocado rice on plates, slice the grilled honey lime chicken, and arrange on top. Finish with lime wedges for an added burst of flavor.

Notes

Serve with a sparkling water infused with lime and mint, and consider adding a crisp green salad to complement the dish. For leftovers, keep in an airtight container in the fridge for up to three days.
